Original Recipe: Summer Salad

People love summer for many different reasons. I, of course, love summer too. However, I would always want to avoid spending too much time in my kitchen during summer time. The humidity and temperature kill, or at least cease, my joy of cooking. If you're having the same problem as I do, you should definitely give this recipe a try. The summer salad would save you time spending in the kitchen by letting the oven do all the work. This recipe has become my to-go summer meal. Now, let's unpack how to prepare this delicious summer salad.

Your List of Ingredients

  • Chicken breast (one large piece)

  • Spring mix (or other salad green that you prefer)

  • Cherry tomatoes (around 15)

  • Broccolis (one cup)

  • Paprika (three tablespoons)

  • Soy sauce (two tablespoons)

  • Vinaigrette & Asian Sesame salad dressing

  • Seasoning blend


Step 1: dry the chicken breast then coating the chicken with paprika. Pouring soy sauce into a bowl then soak the chicken into the soy sauce. Place the bowl in the fridge and let it marinate over night or a few hours.


Step 2: pre-heat the oven to 420F. While waiting on the oven, spread the broccolis in a cake pan. Season the broccolis with seasoning blend (mine is from Urban Accents. But feel free to use whatever you prefer). Take the chicken breast out of the fridge and place the piece into another cake pan.


Step 3: after the temperature reached 420F, place both cake pans into the oven. The chicken breast needs 14 mins and the broccolis need 20 mins in the oven.


Step 4: after the chicken and broccolis are done, take the pans out of the oven. While let both rest for 10 mins, cut the cherry tomatoes into half and place spring mix into a bowl. After 10 mins. place the chicken, broccolis, and cherry tomatoes on top of the spring mix. Pour the salad dressing (Vinaigrette & Asian Sesame from Panera Bread is my favorite. But feel free to use your favorite dressing instead) into the bowl.


Step 5: enjoy the salad!
